I eat cleaner now. I traded in my regular starches for the complex starches like sweet potato instead of English potato and zucchini noodles or zoodles instead of pasta (I still get egg noodles though). I heard about cauliflower rice to use as an alternative for rice but I had never tried it.
The lessons learned from this experience were that this is very messy as cauliflower gets everywhere, and that when heated, cauliflower also evaporates like spinach.
But it was pretty simple and yummy!
